Fitness trainer Jen Selter is ready for Halloween with her recipe for pumpkin pancakes!
The 30-year-old fitness guru doesn’t just love working out. She also loves creating healthy recipes! She recently decided to get in the spirit of the season and share her recipe for healthy pumpkin pancakes before the spooky season really begins!

Although many people carve pumpkins for Halloween, not everyone thinks to eat them! According to Healthline, pumpkin is very nutritious and packed with beta-carotene, a carotenoid that your body converts to vitamin A. Its high antioxidant content can help reduce the risk of chronic disease and even reduce the risk of cancer. It’s also packed with potassium, vitamin C, and fiber, which can benefit heart health.
In her latest Instagram post, Jen sports a white crop top and black jeans as she sets up a long row of heart-shaped white ceramic bowls on her counter. Each contains a different ingredient for peak organization.

Jen combined most of the ingredients into her BlendJet and swirled it before heading into the kitchen to cook her pancakes. After being topped with chocolate chips, Jen did a little dance while waiting for them to cook.
After topping it with cream, he then cut it in half to reveal the delicious stack of pancakes. He finished it off with some chopped walnuts and a drizzle of maple syrup. He headed to the balcony to dig into his breakfast, giving two thumbs up.
“Say hello to your new fall favorite: Nutritious Pumpkin Pancakes that taste good for you! They’re full of nutritious ingredients that make indulgence feel good,” she wrote in the caption, adding the ingredients list:
– ¾ cup pumpkin puree– 2 large eggs– 1 cup unsweetened coconut milk (or your favorite milk)– 2 teaspoons vanilla extract– 2 tablespoons pure maple syrup or honey– 1 tablespoon coconut oil– 1/4 cup cottage cheese– 1 ½ cups old fashioned rolled oats – 2 teaspoons baking powder – 1/2 tablespoon ground cinnamon – 1/2 teaspoon ground ginger – 1 soaked date
She didn’t share any cooking instructions, so fans will just have to watch the video to see how to make it! Fans were quick to praise her latest recipe, with one fan writing, “You’re cute. Keep the great recipes coming girl!” Another follower exclaimed “LOVE JEN!” while other fans showered her post with “delicious” and “tasty” compliments.

This Isn’t the Only Pancake Recipe Jen Has Been Sharing Lately!

Believe it or not, Jen actually kicked off the month by sharing her oatmeal pancake recipe while wearing a purple gym outfit. “Let’s start our day with a delicious oat pancake recipe,” she wrote in the caption. “I have a flavorful trick for you: I place the banana slices on top of the pan before pouring the batter, giving each bite an extra punch of banana goodness!
He made sure to write a clear ingredient list:
– 1 cup oats (ground until smooth and floury) – 1/4 cup creamy cottage cheese – 1 egg – 1 tablespoon honey – 1/2 teaspoon cinnamon – 1/2 teaspoon baking powder – 1/ 2 teaspoon vanilla extract – 1/2 cup of your favorite milk – 1 large, ripe banana – Spray cooking spray or a little ghee/butter
She also adds some ideas for fun toppings, including a drizzle of fresh honey, fresh blueberries or a dollop of peanut butter. Of course, fans at home can top their pancakes to their liking!
